All About Chocolate

Mousse Chocolate with

Chocolate Chips

Ingredients:

  • 250 g dark cooking chocolate
  • 4 egg yolks
  • 250 ml vanilla ice cream
  • 3 white eggs, mix stiff
  • 100 g chocolate milk powder, dissolved with 50 ml water
  • 100 g chocolate chips

Directions:

1. Melt chocolate into a pan, then add egg yolks, stirred until softly mixed. Remove.

2. Add vanilla ice cream into chocolate liquid, mix with ballon whisk until fluffy.

3. Add white eggs which have been stiffly mixed, then mix it again until fluffy.

4. Sprinkle chocolate chips, stirred.

5. Pour into a bowl, then refrigerate it for 3 hours.

6. Serve in glasses while cool.

Chocolate Bread Pudding

Amount Measure Ingredient -- Preparation Method

1 1/2 cups milk
1 cup sugar
1 cup soft bread crumbs
1 1/2 ounces baking chocolate
2 tablespoons margarine
2 large eggs
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 cup milk
whipped cream -- optional

1. Place in top of double boiler the 1-1/2 cups milk, 1 cup sugar, 1 cup

stale bread crumbs and 1-1/2 ounces chocolate. Cook over hot water until

smooth.

2. Stir in 2 tablespoons margarine.

3. Beat eggs until light; add salt, vanilla and 1/2 cup milk. Whisk into the

chocolate mixture. Cook until thick.

4. Pour into a serving dish or to make a firmer pudding, pour into a greased

(with margarine) casserole dish and bake for 20 minutes at 350 degrees. Add

1/2 cup chopped walnuts after cooking if you prefer. Chill and serve with

whipped cream.


Chocolate Cherry Clafouti

Ingredients:

2 tbl unsalted butter, melted
3 c pitted sweet cherries, fresh,
frozen or in a can ( drained)
1/2 c chocolate chips
4 eggs
1 c milk
3/4 c unbleached white flour
1 tsp vanilla
1/2 c sugar
1/4 tsp ground cinnamon
Confectioners sugar


1. Preheat oven to 350 F.


2. Lightly butter a 10-in. pie pan with 1 tbl. of butter. Arrange the cherries and chocolate


chips in the bottom of the pan.


3. In a blender, combine the remaining 1 tbl butter, eggs,milk, flour, vanilla, sugar and


cinnamon. Blend until smooth.


4. Pour the batter over the cherries and bake for 55-65 min., or until puffed and golden


and a knife inserted in the center comes out clean.


5. Cool at least 15 min. before dusting with confectioners sugar and serving.

Yummy Ice Cream

Avocado Ice Cream

Ingredients:

  • 1000 cc milk
  • 350 g sugar
  • 400 g avocado fruit, peel and pit
  • ½ teaspoon green dye for food

Directions:

1. Boil the milk and sugar until boiled. Remove and chill.

2. Put avocado fruits into a blender, process it until soft.

3. Combine avocado fruits with the milk, stir it thoroughly. Add green dye, then stir

it well again.

4. Pour into an ice cream cup, then put it in freezer until frozen. Take it out, process it in

blender again until soft, then keep it in a freezer again until frozen.

5. Ready to be served.

Apple Ice Cream

Ingredients (for 5-6 served):

A:

  • 1 egg yolk
  • 45 g sugar
  • 50 cc milk

B:

  • dash salt
  • 150 cc cream
  • 100 cc apple juice
  • apple (for being grated)

Directions:

1. Put ingredients (A) onto a pan and stir together until it mixed well.

2. Then heat above small fire of stoveuntil it boiled. (be careful, keep with the small

fire cause big fire will make it cloting).

3. Then move the dough onto a bigger mixing bowl while it is filtered and chill.

While waiting for that…

You can grate some apples and then stir the cream until it become stiff then mix it

with grated apples.

4. After the dough is chilled, mix it with cream and grated apples.

5. Pour the apple juice into the dough and stir it well. Move the dough into an ice

cream cup and put them in freezer for an hour.

6. After an hour, stir the dough with spoon. Put it back in freezer, then leave it there

for 30 minutes, then stir it again. Do the same steps for 2-3 times.

7. Then leave it cold again in freezer for 2-3 hours.

8. Take it from freezer and decorate it with whipped cream, apple slices, and mint

leaf in a cup.
